Potato Pizza
| 1 kg | potatoes |
| 1 large | onion |
| 2 | eggs |
| 3 tbsp | flour |
| 1 tbsp | cornflour |
| some | salt |
| some | freshly ground black pepper |
| some | freshly ground nutmeg |
| For the topping: | |
| 5 tbsp | tomato sauce |
| 100 g | sliced leg ham |
| 125 g | mushrooms, chopped |
| 100 g | salami |
| 1 | onion, slices |
| 2 clove(s) | garlic, finely chopped |
| 340 g | mozzarella cheese, shredded |
Method
Peel potatoes and onions and grate coarsely. Mix well with the eggs, flour and cornflour. Season with salt, pepper and nutmeg.
Spread mixture onto a lightly greased baking tray. Bake for about 20 minutes at 160ºC in a preheated fan-forced oven.
Spread on the tomato sauce and top with ham, mushrooms, salami, onion, garlic and cheese.
Bake for a further 20 minutes, season to taste and serve immediately.
Alternative toppings: feta cheese, zucchini, capsicums, tuna, cooked slices of poultry, etc.
