Ingredients

1 kg carrots, cleaned and sliced
green pepper, seaded and cut into strips
2 medium onion, sliced
250 ml tomato puree
200 ml white vinegar
3 tbsp cooking oil
2 tsp Worcestershire sauce
250 ml sugar
1 tsp prepared mustard
1 tbsp salt
 some black peppercorns, grounded to taste

Method

Boil the carrots until they are cooked but still firm, then drain.

Arrange the carrots, green pepper strips and onion slices in layers in a bowl with a lid, ending with a layer of carrots.

Mix together the remaining ingredients in a saucepan, bring to the boil and simmer for 3 minutes, stirring constantly.

Pour the sauce over the carrots, allow to cool, cover with lid and marinate in fridge for 2 days.
