Ingredients

8 stalk(s) spring onion, finely chopped
125 ml white wine, dry
1 tbsp sherry vinegar
250 ml cream
125 g butter, unsalted, chilled and cut into small cubes
 some salt and freshly ground black pepper to taste

Method

Preparation time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

Mix onions, wine and vinegar and boil uncovered until reduced by half. Add the cream and cook, stirring until sauce thickens.

Remove from the heat and whisk butter, piece by piece, into the sauce.

Make sure each piece is dissolved before adding the next.

Season to taste. Serve with fish, crayfish or prawns.
