Ingredients

red chilli, finely chopped
onions, finely sliced
250 g dried apricots, quartered
red pepper, seeded and finely chopped
150 ml olive oil
2 tbsp yellow mustard seeds
2 tsp cumin
2 tsp tumeric
garlic cloves, crushed
2 tbsp castor sugar, 30 ml
2 tsp salt
  black pepper to taste
250 ml apple cider vinegar
100 ml white wine vinegar

Method

Preparation time: ca. 45 min / Grade of difficulty: medium / Calories per portion: n/a

Mix the chilli, pepper, onions and apricots and set aside.

Heat the oil in a pan and add the cumin, mustard seeds, turmeric and garlic. Stir-fry this mixture gently for 2 minutes.

Add the apricot mixture and cook for 5 minutes, stirring occasionally. Add the remaining ingredients, stir and bring to the boil.

Simmer for about half an hour or until the liquid is no longer runny and the mixture is thick and fragrant.

Pour into sterilised jars, cover with wax paper circles and seal. Give the chutney a couple of weeks to mature in a dark place.

This chutney also makes a nice gift. Use smaller jars and fill with the chutney. Close and seal with wax on the outside. Decorate with a shiny ribbon and a Christmas label.
