Isa's Lemon Heaps

with mascarpone

Ingredients

200 g mascarpone
2 tbsp vegetable oil
80 g sugar
2 tbsp lemon juice
1 tbsp lemon peel
200 g plain flour
1 tbsp baking powder
 some milk if needed
 some icing sugar and lemon juice for glacing

Method

Preparation time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

Mix mascarpone, oil, sugar, lemon juice and beat together until creamy. Put in flour and baking powder and mix until a smooth dough forms. If needed add some milk, the dough will be a bit sticky, therefore leave it in the fridge for about 15 minutes.

As soon as the dough is compact enough, spoon little heaps onto a baking tray and bake on 180-200°C degrees for about 15-20 minutes until surface turns lightly brown.

Leave to cool and brush on the glazing of icing sugar and lemon juice. The heaps should be soft in the centre.
