Mashed Potatoes with Pork Sausages in Onion Gravy
| For the mashed potatoes: | |
| 800 g | potatoes |
| 1 tbsp | butter |
| 200 ml | milk |
| 1 tsp | salt |
| 2 tbsp | parsley, chopped |
| For the Pork Sausages in Onion Gravy: | |
| 2 tbsp | vegetable oil |
| 1 medium | yellow onion, sliced finely |
| 2 tsp | fresh chopped herbs, majoran, thyme or 1tsp dried herbs |
| 1 clove(s) | garlic, crushed |
| 4 tbsp | dry red wine |
| 1 cup(s) | beef stock |
| 1 tbsp | tomato puree |
| 1 tbsp | double cream |
| salt and pepper to taste | |
| 6 medium | pork sausages |
Method
Preparing the mashed potatoes:
Peel and boil the potatoes until they are cooked. Drain and mash up potatoes add butter, warm milk and the salt. Pound these together until thoroughly mashed. Stir in the parsley.
Preparing the pork sausages in onion gravy:
In a medium size pot over medium low heat, heat the oil. Add the onions, herbs and garlic. Cook gently until the onions are golden brown. Stir in the red wine. Cook gently for 2 minutes. Add the stock, tomato puree and cream. Cook another 6 minutes, salt and pepper to taste.
Meanwhile, fry the sausages and drain on kitchen paper. Keep warm.
To serve, place hot mashed potatoes on a plate with the cooked sausages. Pour onion gravy over.
