Fried Morning Glory - Thai Pak Boong Fai Deng

Ingredients per portions

400 g morning glory
10 clove(s) garlic, chopped
red Thai chillies, large (prik chee-fa sot daeng), cut into thin rings
2 tbsp salted soy beans
1 tbsp fish sauce
1 tbsp oyster sauce
1 tsp sugar, to taste
  oil

Method

Break off the leaves of the morning glory, and cut stems into 5 cm long pieces. Separate leaves from stems.

Heat a wok with oil. When the oil is very hot, add morning glory stems and stir fry for a minute. Add all other ingredients, and stir fry for 2 more minutes.

Serve with Thai fragrant rice.

For vegetarians, fish sauce can be replaced by soy sauce.
