Fried Morning Glory - Thai Pak Boong Fai Deng
very tasty, and fast to make| 400 g | morning glory |
| 10 clove(s) | garlic, chopped |
| 6 | red Thai chillies, large (prik chee-fa sot daeng), cut into thin rings |
| 2 tbsp | salted soy beans |
| 1 tbsp | fish sauce |
| 1 tbsp | oyster sauce |
| 1 tsp | sugar, to taste |

Method
Break off the leaves of the morning glory, and cut stems into 5 cm long pieces. Separate leaves from stems.
Heat a wok with oil. When the oil is very hot, add morning glory stems and stir fry for a minute. Add all other ingredients, and stir fry for 2 more minutes.
Serve with Thai fragrant rice.
For vegetarians, fish sauce can be replaced by soy sauce.
