Red Onion Relish with Balsamic Vinegar

Ingredients

600 g red onions, cut into strips
3 clove(s) garlic, finely chopped
40 ml olive oil
1 tsp yellow mustard seeds
35 g brown sugar
80 ml balsamic vinegar
1/4 tsp salt

Method

Preparation time: ca. 10 min / Grade of difficulty: easy / Calories per portion: n/a

Heat the oil and fry the onions and garlic over low heat, covered, for about 30 minutes. Stir occasionally. Add the mustard seeds and cook for a further minute.

Add sugar, vinegar and salt and bring to a short boil. Reduce the heat and cook for about 5 minutes until juices are reduced.

Put into sterilised jars, seal well and turn the jars upside down. Let it cool for about 15 minutes and turn back.

Serve with cheese, as a spread on sandwiches or with grilled/fried meat, fish or poultry

Another very tasty recipe from down under. Thank you, I tried it at the weekend. Serving it together with chicken bbq. As my lost aussie friend would say "Great stuff".
