Ingredients

2 tbsp sour cream, buttermilk or plain yogurt
250 ml heavy cream

Method

In a small bowl, stir together the ingredients. Cover with plastic wrap and let stand for at least 8 hours and as long as 24 hours in a warm place until thickened.

Stir and refrigerate in a covered container. The cream gets a better flavour if left in the refrigerator for several days. It will keep fresh for up to 1 week.
