Ingredients

190 g sugar, white
egg(s)
250 ml sunflower oil
225 g cake flour
1 tsp bicarbonate of soda
1 tsp baking powder
2 ml bananas, mashed, 2 o3 depending on size
2 tsp cinnamon
60 ml nuts, chopped
250 ml carrots, grated
115 g butter
100 g cream cheese
200 g icing sugar, sifted
1 tsp vanilla essence
 some pecans or walnuts for decoration

Method

Preparation time: ca. 45 min Resting time: ca. 1 hr / Grade of difficulty: medium / Calories per portion: n/a

Beat sugar, oil and eggs together well. Sift together flour, baking powder, bicarb and cinnamon. Beat into the oil mixture. Add mashed bananas, carrots and nuts, mixing gently.

Grease two square baking tins or a 26 cm springform tin with a ring insert. Pour batter into tin(s)and bake in a pre-heated oven at 180 degrees C for 25-30 mins (square tins) or for 60 mins in the springform tin.

Icing:
Cream butter and icing sugar with a metal spoon. Mix cream cheese with vanilla essence and fold butter mixture into it.

Turn out cake when it has cooled slightly. When the cake has cooled down completely, use half the icing to sandwich together the squares and ice the top with the rest. Sprinkle with nuts or decorate with halved pecans or walnuts. For the round cake, cut in half and sandwich together with icing, use the rest to decorate the top as per the square cake.

Can be kept at room temperature, but should preferably be refrigerated.

Would that be 250 grammes of carrot not ml ?????????

No, it's easier to grate the carrot and use a cup measure. Appr. 1cup or 250ml is needed for the cake. A bit more or less makes no difference. I grate the carrot(s) finely, not on the coarse side of the grater, as it gives a better texture. One large carrot should do the trick.

We don't really use cup weights and measures in the UK but I do happen to own a set of cups. Thanks for the info and for getting back so quick with an answer to my problem.
