Oven - Baked Stuffed Meat Loaf with Vegetables

Ingredients

500 g beef, minced
500 g pork, minced
1 slice(s) white bread, dried
 some milk
onion, finely diced
2 tbsp fresh flat parsley, chopped
egg(s)
2 tbsp cream
  salt, freshly ground pepper, paprika, cayenne pepper, cumin
1 tbsp mustard
  For the Filling:
yellow capsicum, cut into stripes
120 g Feta cheese, in slices
red capsicum, cut into stripes
 some sesame seeds
250 g cherry tomatoes
2 stalk(s) celery, sliced

Method

Preparation time: ca. 20 min / Grade of difficulty: medium / Calories per portion: n/a

Soak the bread in milk. Squeeze out the excess milk.

Combine the meat with the bread, onion, parsley, egg, cream and spices. Divide the meat into 3 equal parts and form into flat oval-shaped pieces.

Place first piece into an oiled casserole (Dutch oven)and put yellow capsicum slices onto the meat, followed by the feta. Cover with the second meat piece.

Place red capsicum onto this and finish with the remaining meat on top. Form into a loaf and sprinkle with sesame seeds.

Bake the loaf covered in a fan-forced oven at 160ºC for about 120 minutes. After 90 minutes add tomatoes, celery and remaining capsicums to the pot.

Tip: Substitute the celery with leek or/and carrots.
