Vegetable - Rice Patties
| some | olive oil for deep frying |
| 240 g | cooked plain rice, cooled |
| 2 tbsp | spring onions, chopped |
| 4 tbsp | red capsicum, chopped |
| 4 tbsp | sweet corn, canned and drained |
| 2 clove(s) | garlic, finely chopped |
| 1 large | red chilli, seeded and chopped |
| 2 tbsp | soy sauce |
| 2 tbsp | cornflour |
| 2 small | eggs |
| salt, black pepper, paprika, turmeric |
Method
Mix together all ingredients, except the oil.
Heat oil in a large saucepan and add spoonfuls of mixture to pan. Flatten the patties and fry until golden brown from both sides. Do not turn over the patties to early.
Drain patties on kitchen paper and serve with dip sauces of your taste.
The vegetables in this recipe may be varied to suit what you have on hand, eg. shallots, peas, mushrooms etc.
