Pork Loin braised in Onion Sauce

Ingredients

5 piece(s) pork loin medallions, together 500g
 some olive oil
400 g onions, cut into halves and sliced
1 large red chilli, seeded and sliced
3 clove(s) garlic, finely chopped
2 tbsp soy sauce
1 tsp sugar
 some salt, black pepper, paprika, cumin
150 ml vegetable or chicken stock
1 1/2 tbsp corn flour, mixed in little water
 some chives

Method

Preparation time: ca. 20 min / Grade of difficulty: medium / Calories per portion: n/a

Heat oil in a casserole and fry the meat from both sides for about 3 minutes. Remove the meat and set aside.

Fry onions for about 4 minutes until translucent. Add chilli and garlic and sauté for a further minute.

Mix soy and sugar and pour over the onions. Season to taste.
Pour in the stock and bring to a short boil. Reduce the heat and place the meat onto the onion mix.

Braise covered for about 50-60 minutes over low heat. If desired stir in the corn flour-water mix to thicken the sauce.

Sprinkle with chives and serve with potatoes/pasta/rice and broccoli.
