Gratinated Pork Loin Chops

This is a very easy and tasty recipe that can be made in a flash.
Gently wash and pat dry the pork chops, and season them from both sides with salt and pepper. (Use other seasonings as well if you like, try paprika, curry or garlic powder.)
Heat the vegetable oil in a large skillet, and cook the chops for 3-4 minutes on each side.
Remove the pork chops and place them in a shallow baking dish. Layer each chop with tomatoes, season the tomatoes with salt & pepper, and top with one slice of cheese.
Bake at 180°C for 20-30 minutes, until cheese has melted and browned slightly.
Serving suggestion and variation: Serve with rice, French fries, or potato croquettes. Also try substituting the tomatoes for sliced pineapple (definitely use curry for this version), or sliced mushrooms.
