Szechuan Beef

Ingredients

500 g beef fillets, cut into small strips
250 ml vegetable oil
1 tbsp vegetable oil
3 small red chillies, finely sliced
1 tbsp ginger, finely diced
2 tbsp hoisin sauce
1/2 tsp salt
1/2 tsp Szechuan pepper, dry roasted and ground
45 g spring onions, finely sliced
150 g iceberg salad, finely shredded

Method

Preparation time: ca. 10 min / Grade of difficulty: easy / Calories per portion: n/a

Heat oil in a hot wok or heavy based pan.

Add half the beef and stir-fry for one minute, stirring constantly to prevent beef from sticking together.

Remove and drain on kitchen paper. Repeat process with remaining beef.

Remove excess oil from wok and wipe clean.

Heat extra oil, stir in chilli, garlic and ginger and cook on medium heat for 30 seconds. Stir constantly.

Return beef to the wok with hoisin sauce and stir-fry for a further 30 seconds.

Add Szechuan pepper and salt and stir-fry for 30 seconds. Finally, stir in spring onions.

Serve immediatly with lettuce.

I love Szechuan. But are you sure about 250 ml Oil? That seems quite a lot to me.

I'll make it anyway, but I think I'll cut down on the oil.
