Pasta with Spicy Tomato Sauce

Ingredients

1 tbsp olive oil
350 g bacon, short cut, rindless or speck
350 g onions, diced
5 clove(s) garlic, finely sliced
3 small red chillies, finely sliced
800 g tomatoes, canned, diced,
 some black pepper, freshly ground
 pinch(es) dried oregano, marjoram and rosemary
70 g Parmesan cheese, freshly grated

Method

Preparation time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

Heat the oil on medium heat in a pan and fry the bacon until becoming crispy.

Stir in the onions, garlic, chillies and fry until the onions are glazed.

Add the tomatoes and bring to a simmer. Season to taste with the dried herbs and pepper.

Stir in 25 g of the cheese and let it simmer for 5-10 minutes or longer.

Serve with pasta of your choice and the remaining cheese.

Tip: Substitute the canned tomatoes with ripe, red, peeled and diced tomatoes.
