Norfolk Apple Cake

traditional apple cake from the North Norfolk coast

Ingredients

400 g cooking apples, finely diced
125 g mixed fruit
250 g SR flour
125 g brown sugar
125 g butter, salted
1 large egg(s)
1 tsp cinnamon
1 tsp mixed spices

Method

Preparation time: ca. 30 min Resting time: ca. 1 hr / Grade of difficulty: easy / Calories per portion: n/a

Line the bottom of a 8"/20 cm cake tin.

Rub butter and flour together. Add egg, sugar, cinnamon and mixed spice. As soon as mixture is smooth, stir in mixed fruit and apples.

Fill mixture into cake tin and bake for around 35 mins at 180˚C/fan 160˚C. Skewer probe might be misleading due to apples, but cake should feel sufficiently firm to the touch when pressed very lightly in the middle.

Cool in the tin.

Extra tip: Cake can also be served warm, as a dessert, with cream or Cream of Cornish ice cream.

This cake can be frozen after baking and can even be defrosted in the microwave, if needs be. It looks - and tastes - very nice when sprinkled with a sugar-cinnamon mixture (light brown sugar mixed with 1/2 - 1 tsp cinnamon), though this should be done after defrosting.

This recipe clearly needed extra liquid and I ened up adding about 150ml of milk to make it work. can't see how others were successful without it. Lovely cake in the end.

Really easy to make. Nice and moist, I made with little raisins. Next time will try with 50% whole wheat flour, some walnuts and white choc chips (my trade mark)

This is a fab and easy to make apple cake recipe.

I made up a double mixture as I had lots of apples to use up and used raisins rather than mixed fruit! The mixture itself didn't look like cake mixture before being baked but came out perfect.

I cooked it in a couple of loaf tins and one normal 8 inch round tin - and the loafs turned out heaps better than the cake tin!
