Ingredients

250 g roasted walnuts
125 ml olive oil
125 ml vegetable oil
100 g Parmesan cheese, grated
1 medium zucchini, sliced
1 small onion, chopped
2 tbsp parsley, chopped
1 tbsp oregano, chopped or 2 tbsp. dried
1 tbsp chervil, chopped or 2tbsp dried
1 clove(s) garlic
1/2 tsp salt
1/4 tsp pepper, ground

Method

Preparation time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

Parboil the zucchini for 3 minutes, drain. In an electric blender mix all ingredients until smooth.

Pour this mixture into a sauce pan and heat to just below the boiling point.

Serve over your choice of spaghetti.
