Ingredients

1 bunch(es) arugula salad, teared into pieces by hand
4 slice(s) bacon
6 tbsp pine nuts
20  Parmesan cheese slices, thinly shaved
  For the Dressing:
125 ml extra-virgin olive oil
2 tbsp honey
4 tbsp balsamic vinegar, white
1 clove(s) garlic, minced

Method

Preparation time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

Wash the arugula and tear it up coarsely. Place in a bowl.

Cut the bacon into small pieces; saute gently in a skillet until crispy, drain.

Saute the pine nuts in the bacon fat until lightly colored, drain.

If you are not using bacon, you can toast the pine nuts in a dry non-stick pan.

Prepare the dressing by combining all the ingredients.

Serve the arugula with the dressing, bacon bits, pine nuts and parmesan shavings.
