Thai - Style Salmon Fillets

Ingredients per portions

piece(s) salmon fillets, e. g. Tasmanian (400-500g)
15 g fresh ginger, finely sliced, julienne
large lemon gras stem, the inner white part finely sliced
clove(s) garlic, finely chopped
shallots, finely sliced into rings
small red chillies, deseeded and finely sliced
tbsp coriander leaves, chopped
leaves kaffir lime, finely sliced into stripes or zest of 1 lime
  For the sauce:
tbsp lime juice
1.5 tsp soy sauce
tsp fish sauce, Nýớc mắm
1.5 tbsp palm sugar


Method

Mix sauce ingredients together.

Make two layers of foil per piece of salmon to make it strong enough and to hold the juices.

Put the salmon into the foil pieces and place the ginger, lemon gras, shallots, chillies, coriander and lime leaves on top of the salmon.

Pour the sauce over all pieces.

Seal the foil parcels and bake in a preheated fan oven (180ºC) for about 10-15 minutes.

Serving suggestion: Serve with rice and steamed baby spinach.

Hi Petra,

I tried this recipe at the weekend and it was very successful. I used kingclip instead of salmon as I am a great fan of this fish and we did it on a bbq grill. Everybody made compliments about it and I just pass them on to you.

Hi Petra,
I tried it again but could not get the fish I wanted, so I used halibut, not realizing that halibut takes only a few minutes to be cooked. So my fish turned into a mash. I learn the hard way, so it seems. Next time I´ll use a fish with firm flesh.
