Ingredients

180 ml olive oil
egg, beaten
60 g butter
chicken breasts, split, boned and skinned
1 tbsp vinegar
60 g bread crumbs
1 clove(s) garlic, minced
50 g coconut flakes

Method

Preparation time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

Wash chicken and pat dry. Pound chicken to about 1/4 inches thickness between two sheets of foil or wax paper.

Combine in a bowl: egg, 120ml olive oil, vinegar and garlic.

Place bread crumbs and coconut flakes on a plate.

Dip chicken in egg-oil mixture and then in coconut breadcrumbs, coat evenly.

In a frying pan, heat butter and 60ml olive oil. Cook breaded chicken until flaky and golden brown.
