Pasta Salad

...with a light mayonnaise dressing

Ingredients

500 g Elbow maccheroni
1 large can(s) corn
1 large can(s) sweet peas
200 g cooked ham
bell pepper, any color
150 g plain yoghurt
75 g mayonnaise
1 tbsp mustard
2 tbsp vinegar
  salt and pepper

Method

Cook noodles in plenty of boiling water until al dente and drain.

Cut ham into small cubes or strips. While the pasta is cooking, in a big bowl, mix mayonnaise, yoghurt, mustard and vinegar and season with salt and pepper.

Add the vegatables and cold noodles and mix thouroughly. Taste and adjust seasoning amount if needed. Remember, the noodles will soak up a lot of flavour, be generous with salt & pepper. Refrigerate for at least one hour before serving, and mix once again before plating.

Variations: Use any vegetables you like, or use leftover roast instead of ham. Serve with BBQ chicken.
