Orange Couscous with Pine Nuts
quick and easy side dish| 1 | orange, juice and zest |
| 250 ml | stock, chicken or vegetable |
| 250 g | couscous |
| 30 g | pine nuts |
| 2 tbsp | flat leaf parsley, finely chopped |
| 1 tsp | mint leaves, finely chopped |

Method
Wash the orange under hot water and dry. Rub off the zest and squeeze the orange.
Roast the pine nuts in a non-sticking pan until golden brown.
Bring the stock mixed with the orange juice and zest to a short boil. Turn off the heat. Mix in the couscous, cover and set aside for 10 minutes.
Stir in with a fork the pine nuts, parsley and mint.
Season to taste and for example serve with Pork Fillets with Orange Sauce.
