A quick meal for pasta lovers

Ingredients

350 g pasta, penne or trennette
2 tbsp olive oil
450 g tomatoes, diced
1 clove(s) garlic, crushed
1 cube(s) vegetable bouillon, crushed
3 tbsp parsely, chopped
150 g shredded cheese
  salt and pepper

Method

Preparation time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

Cook pasta al dente. Drain.

In a large frying pan heat olive oil, add the pasta and cook until starting to turn golden. Make a well in the middle; add tomatoes, garlic and bouillon. Let simmer a little bit to dissolve the bouillon. Mix everything thoroughly, let simmer for 8 minutes.

Sprinkle parsley, salt and pepper on it, stir again. Add shredded cheese; fold over carefully until cheese is melted.

Serve with a leafy salad and some crusty white bread. Tastes great as left-over the next day.

Note:
You can take any shredded cheese which will melt nicely. I prefer mixed shredded cheeses like mozzarella/provolone, or Cheddar, Colby, Monterey Jack and Manchego Cheeses, etc.
