Apple Gingerbread

Ingredients

250 g butter, unsalted
100 g sugar, brown
egg(s)
120 ml treacle, very dark sugar syrup
150 g flour, plain
50 g flour, self raising
1 1/2 tsp bicarb of soda
1 tsp ginger, ground
2 tsp cinnamon
90 g apple, grated
120 ml water, hot

Method

Preparation time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

Cream butter and sugar. Add eggs. Stir in treacle and dry ingredients. Self raising flour can be substituted with plain flour and 1/2 tsp. of baking powder.

Fold in apple and hot water. Bake in lamington tin or muffin tray at 180°C for 35 - 40 minutes.

Note: It is possible to add sultanas and/or chopped nuts. Brush surface with a mixture of icing sugar and hot water. Cut into slices.
