Fried Rice with Pork or Turkey, Peas and Corn

An easy dinner in 30 minutes

Ingredients

250 g pork cutlets, boneless or turkey breast cutlets
420 g rice
1 large can(s) sweet peas
1 large can(s) corn
red bell pepper
250 g button mushrooms, sliced (fresh or 1 can)
1 medium onion
 some salt and pepper
 some paprika powder
 some curry powder
2 tbsp vegetable oil

Method

Preparation time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

Cook rice in plenty of salted water for 20 - 25 minutes until done.

While cooking rice, cut pepper in half, take out seeds and wash. Pat dry and cut into small dice (about the size of a pea). Cut meat into strips.

Season the meat with salt, pepper, paprika powder and curry.

In a big pot, heat vegetable oil and cook meat in small batches until done. Take meat out and cover.

Peel and dice the onion and sauté it in the same pot. Add mushrooms and sauté as well.

Drain the cooked rice and add it to the pot. Return the meat to the pot and add corn and peas. Mix well, seasoning with some more salt, pepper, curry and paprika powder and serve.

I've been looking for this type of recipe. I'll just have to leave out the corn, hubby will not eat corn, some childhood drama.
