LL's Pot Roast

A hearty meal

Ingredients

1 1/2 kg beef chuck, boneless
500 g carrots, cleaned and cut into 1 inch pieces
4 large potatoes, peeled and quartered
1 large can(s) stewed tomatoes, about 500 g
2 medium onions, coarsely chopped
2 stalk(s) celery, diced
2 clove(s) garlic, crushed
400 ml dry red wine
1/2 tsp sugar
  salt & pepper to taste
1 tbsp mustard, if desired
  oil, for browning

Method

Preparation time: ca. 25 min / Grade of difficulty: medium / Calories per portion: n/a

Salt and pepper meat generously, brown all sides well in large, heavy skillet.

Set meat aside, briefly sauté onions and garlic in the skillet; add potatoes, carrots, tomatoes, celery, sugar and wine.

Place meat on top of vegetables; if necessary, add water (or more wine) to cover vegetables and part of meat.

Cover skillet and place in 300 degrees F (150 Celsius) oven, braise for 1½ - 2 hours.

Remove meat, potatoes and approximately half of the carrots and set aside.

With electric hand chopper puree remaining carrots, onions and celery in skillet.

Salt and pepper the thickened sauce to taste, add mustard.

Slice meat into portions and serve with the potatoes, carrots and sauce

Hello LL, another 'delicious' to you. Hubby cooked your pot roast today and it was yummy (his word). He only had to substitute the celery stalks with the celeriac type (always have some in the freezer) and the good man couldn't find the tomatoes :-O and used tomato paste with the last fresh ones we had. He also took a different cut of beef; however, that did make a difference, it turned out really good.
Thank you for a great recipe and oh, by the way, I have about 20 pints of stewed tomatoes in the other cupboard, I've canned last season :-)))).

This is not a potroast this is stew,potroast has no potatos in it

Absolutely delicious! My mother in law taught me a similar recepy and my family and I can't get enaugh of it. And potatoes absolutely belong with pot roast!
