No Easter is complete without this oval natural product....

They are small, oval, white or brown in colour and they are full of essential vitamins, dietary minerals, micronutrients and protein. We often use them as ingredients in desserts, cakes or gravy, usually without taking any further notice of these little beauties and their versatility. Except in the mornings, when we have them scrambled or fried, eggs only rarely take a leading role in our menus. Yet on a few days every year the inconspicuous eggs turn into vibrant stars in vividly coloured robes. They are hidden by the Easter bunny and especially children look forward to hunting after these unique wonders of nature, stripping them of their painted jackets and eating them with pleasure.

Without eggs a lot of delicious dishes would be missing from our menu. Just think of cakes and biscuits, desserts and sweets of all sorts, or creme sauces and dips, such as Hollandaise sauce or Aioli. They are real all-rounders and can be used as an emulsifier, thickener or as a base for foams and aerated dishes. Their reputation for being unhealthy, however, is largely undeserved, as new studies have suggested the cholesterol contained in eggs only has a small effect on the overall cholesterol level of humans. (Of course, this may not apply to people with a pre-existing condition  affecting their cholesterol regulation.)

As you can see, eggs are healthier than you may have thought. These oval all-rounders not only contain vitamines A, E and K as well as B-vitamines, but also vital dietary minerals and micronutrients, mostl of all phosphorus, calcium and iron.

The egg yolk in particular contains large amounts of high-quality protein, which can easily be absorbed and processed by the human body.

Despite these positive qualities an excessive consumption of eggs should be avoided, as eggs are rich in fat, as well.
