Hi all,

I have bought a top rump roasting joint of beef and I have been searching for recipes but can not find any for how I want to cook the meat.

I have also recently bought an oval cast iron casserole dish (5L), and I was hoping to cook the meat in this?

Does anyone have good recipes for this type of roasting joint cooked in a cast iron dish?

This is dead easy - go to the search bar at the top of the CU Page, enter Pot Roast and select only recipes and a number will come up. To do exactly what you request - cook beef in a metal casserole or "Dutch Oven " a it is known in the US click this link

Jack as an alternative: Brown the beef in some oil in the cassserole and remove. Fry a few thickly sliced onions, carrots and celery in the bottom of the casserole then add a few bayleaves and place the meat on top of the veg. Pour in a glass or two of red wine, close the casserole and place in the oven at about 160C and leave for between 15 and 30 mins per lb, at the bottom end for rare, the top end for well done.

If you want to do it on the hob, use a heat diffuser or asbestos type mat, but you will need to cook a bit longer.
