Christmas models for cake

Hi i have a few Christmas cake orders all with edible decorations i normally use fondant icing to make my models etc but find they are too sweet to eat can anyone suggest what else i can use instead.
was thinking cake balls stacked for snowmen will these work for other characters? or will they just fall apart
has anyone tried rice crispy cakes for modeling and how long would they last
all together i have 2x cottages, 6x snowmen, 2x santas, 3x carol singers, 6x children, trees, 3x sledges, sleigh, ice skaters, igloo, penguins etc. (going to be very busy)

Hi Carol79,

I am no expert on this but wondered if you could use marzipan and then paint it with food colours?

Hi Carol79 Like Androcles I would recommend marzipan and Ive found that the white marzipan can be coloured like fondant. Most of the big supermarkets now offer the white marzipan. Alternatively have you considered meringues for snowmen or white chocolate (which can be coloured).
Finally, as you seem experienced you could create 'runouts' although this would give you a flat picture, rather than 3D .
