Hi everybody,

as new years eve party is just around the corner and we decided to have raclette we would like to know your favourite ingredients for it. Any ideas are welcome.

Potato, Raclette cheese (fat cheese from the Wallis), hot and spicy cornichons and "Bündner Fleisch".

The real thing.

Dear Heidi,

Please for the rest of us - what is "Bündner Fleisch"? And what or where is the Wallis? In England to be called a Wally is not very nice!

Buendner Fleisch is dried beef from Graubuenden, a Canton in the east of Switzerland. It is very gooooood!

Wallis is a Canton in the west of Switzerland.

Both Cantons have high mountains and are famous for their cheeses!


I love Raclette! We have a little Raclette stove with a grill on top and so we serve Raclette with bacon, meats, sausages, vegetables and different dips. Of course some pickles and potatoes are to be served with it.

You can also serve some sliced tomatoes to be put on top of the cheese or any other good stuff. Be creative!

Raclette is an indigeneous Swiss dish, melted cheese is scraped from a large cheese round in front of a fire and served simply with potatoes, often also with pickles and the Bündner Fleisch. As Dialog already said, this is air-dried lean beef, thinly cut. I ate Raclette in Zermatt (the village below the Matterhorn) and love this traditional version.

Today, in the modern version, the cheese is melted in an electric Raclette stove at the table with a grill on top in the way Dialog described.
